Gussenhoven's "The Phonology of Tone and Intonation" seems like a really fun and interesting book.
It begins by debunking the misconception that stress is loudness (this was first discovered in the 50s and 60s). The book is filled with F_0 diagrams generated by Praat (which is easy to download and play around with).
He also goes into linguistic rhythm a bit. It would be cool to focus on this. Lots of applications to writing poetry and lyrics.
