Does anyone know where I can find multivariate sets for stuff like this?
Say, really simple questionnaires, like:

* DOB
* Place of Birth
* Sex
* Sexual Orientation
* Race
* Height
* Weight
* Marriage status
* Income
* Educational level
* Profession
* Smoking

It's really not very hard to make.

For U.S. data, you can construct data sets with most of those variables using DataFerrett from bls.census.gov. Or alternatively, from the bls.gov website, census.gov, or Google "DataFerrett".
